What a Chef's knife is for European kitchens, the Santoku is for Japan and the whole of Asia: so versatile in shape, weight and edge that it can be used for mincing and chopping herbs, vegetables and fruit as well as for preparing fish and meat. The sharp blade and thin, hollow-ground edge of a of the Classic Ikon Santoku allow anything from regular to wafer-thin cuts - and it's modest size makes it easy to handle.

Classic Ikon knives from Wusthof feature a distinctive, double-bolster design for professional-style heft, exceptional balance and distinctive beauty. The half bolster allows for the knife to be honed and sharpened the entire length of the blade while the heel bolster provides added balance. The elegant, ergonomic handle is made of a highly durable synthetic material - Polyoxymethylene (POM) - which has a tighter molecular structure to resist fading and discoloration. Each Classic Ikon knife is precision-forged from a single blank of high carbon stainless steel, tempered to 58 degrees Rockwell, with a full tang that is triple riveted to the handle for precise control. Wusthof's Precision Edge Technology (PEtec) produces a blade that is 20% sharper with twice the edge retention.
