This excellent set contains a 3.5" paring knife a 5" serrated utility knife, a 7" santoku, an 8" bread knife, an 8" chef's knife and an 8" honing steel, plus a pair of all-metal kitchen shears, and a 7-Slot walnut knife block. TC Series knives from Cangshan are full-tang knives fully forged from Swedish 14C28N steel, an alloy that measures 59 +/- 2 on the Rockwell Hardness Scale. The steel offers exceptional sharpness and holds an edge up to 5 times longer than German X50Cr15MoV steel. The patent-pending design of TC series cutlery focuses on the uniquely tapered tang, which makes each knife comfortable and perfect for precise cutting. Each TC Series knife comes with a carbonized solid-ash, half-open magnetic sheath.
