Narukami knives from Shun are unique in their construction: a carbon steel blade core is clad in San Mai, bead-blasted stainless steel. You get the performance and easy sharpening of carbon steel with the protection and durability of stainless steel. Narukami’s Blue II carbon steel cutting core takes and holds a razor-sharp edge, then re-sharpens easily when needed. Like all carbon steels, Blue II requires additional care to prevent rust and corrosion from forming on the carbon steel core. Cleaning and drying immediately is the key. Over time, the carbon steel edge will darken, developing a patina which, when formed, will also help protect the edge. You can see the change over time in the before & after image above. Narukami knives are hand-crafted in Japan, with a full tang for strength and balance, and a comfortable handle. They carry a limited lifetime manufacturer's warranty.
