The classic, Italian-made pasta machine is the Marcato Atlas 150. This sturdy, efficient machine makes either fettucine or linguine, and it's simple to use. It features anodized aluminum alloy rollers, not the nickel-plated rollers subject to flaking that are found on other machines. Just make a pasta dough out of flour and eggs and run it through the stainless-steel rollers to knead it. Then click the rollers closer together as you crank the dough through. Take the resulting sheet of beautiful, pale-yellow pasta and feed it through either the fettucine or linguine cutter and you're done. With a little practice, you'll be finished before your water comes to a boil! The Atlas pasta maker includes complete instructions and a removable "C"-clamp for attaching the machine to your counter.
